I needed something to take to a potluck and thought I would make dessert since I had no other groceries at the house for a real dish. I had this recipe from my living-in-Hawaii-days and it took me ALL AFTERNOON TO MAKE!
Ingredients for Sponge Cake
1/2 cup cake flour
6 Tbsp sugar
1/8 tsp salt
1 tsp baking powder
1/4 cup oil
1 large egg
1/4 cup water
4 egg whites
1/4 cup sugar
pinch of cream of tartar
Method
preheat oven to 350F
- In a small bowl sift together the cake flour, sugar, salt and baking powder. set aside.
- in a separate bowl, combine oil, egg and water. when mixed, add to the sifted ingredients and mix the batter until smooth
- in another bowl, whip 4 egg whites and cream of tartar. gradually add the sugar and continue to whip until a stiff meringue forms
- fold batter into the meringue and mix thoroughly
- pour the entire batter into an ungreased 9" springform pan
- bake for 20 to 30 minutes
Ingredients for Whipped Cream:
1 1/2 cups heavy cream
2 Tbsp sugar
method
- combine heavy cream and sugar in a bowl. whip until stiff
(1/3 of this will be folded into the chilled Haupia mixture and the remainder is to be used to frost the cake)
Ingredients for Haupia
1 1/2 cups coconut milk
1 cup milk
1/2 cup sugar
1/3 cup cornstarch
method
- bring the coconut milk and 1/2 cup of milk to boil
- mix sugar and cornstarch together then add the remaining 1/2 cup of milk and mix until smoooth
- add sugar and cornstarch mixture into the boiling coconut milk
- stir vigorously over medium heat until pudding thickens completely
- remove from stove and pour into a bowl or dish. cool in refrigerator until set.
- when set, whip the haupia until smooth
- fold in 1/3 cup of whipped cream
- reserved until the cake is cooled
Finishing the cake
- when the cake is completely cooled, cut into 2 layers
- fill layer with 2/3 of the haupia mixture
- frost the cake with the remaining Haupia mixture
- sprinkle coconut flakes on top as decoration
That was the recipe but I didn't follow it exactly....
For the Haupia, I used Haupia mix instead. So I made that first so I could chill it in time
The sponge cake came out sooooooooooo soft and it is impossible to cut into layers, so forget it! I had to make another cake in order to have a 2 layers cake. Here's a collage of the process to share.
the filling looks like cottage cheese but it's much much tastier!
